An old school lantern in disguise, this one is a very technical pastry, including a transparent thin glass made out of sugar and a candle full of surprises. It is composed with a delicious pecan sponge baked with a crunchy pecan sable, an oozing pecan praline, a pecan cremeux, a pecan mousse, a caramelized marshmallow and some crunchy caramelized pecan chunks.
