This project was inspired by the iconic candied apple, taken to an oversized scale. I created a giant sugar-candied apple with a glossy red finish, then paired it with individual pastries in disguise, displayed all around it. Each candied apple pastry hides layers of apple cider infused vanilla soft caramel, slowly caramelised apple compote, and a moist cinnamon almond sponge, finished with a crunchy cinnamon streusel at the base. The entire piece is dipped in an ultra-thin, crunchy red chocolate shell and coated with a glossy red glaze to recreate the perfect candied-apple snap. To complete the illusion, I finished each one with a double-color chocolate stick (my favorite detail of the project). Would you want to try one of these candied apples? 🍎🍫
