I really wanted to focus an incredible amount of time working on the taste for this creation.
It is composed with a crunchy sweet dough, a moist peach sponge, a sous vide slow cooked (16 hours) peach compote, and a light peach mousse.
The rest of the ensemble is crafted out of thin layers of white chocolate!
