The Telephone!

This one is full of little techniques to create this retro telephone. I wanted to work with an ingredient not very well known (Rhubarb) that I've paired with strawberry. It is composed with a thin layer of crunchy sable, a delicious strawberry financier, a sous vide compote of rhubarb and strawberry, a strawberry mousse and topped with a crunchy streusel hidden in the handset. The top part is crafted with a Ruby chocolate naturally pink!
