Asian inspiration for one of my favorite pastry creations #schoolofchocolate, it is composed with a crunchy matcha sweet dough, a light Japanese roll matcha sponge, a matcha cremeux, a yuzu cremeux, a yuzu jelly and a green tea matcha mousse. The flower is crafted out of 100% white chocolate!
